A Summer Lunch: Corn and Black Bean Salad
Today for lunch I decided to make a variation on a recipe I found in the Daily Texan. Here’s what I made:
Corn and Black Bean Salad:
2 ears of fresh corn, husked
Juice of 1 Lime
1 Tbsp. extra virgin olive oil
1/4 cup chopped fresh cilantro
1/2 tsp. salt
Freshly ground pepper to taste
1 15-oz can black beans, rinsed
1 C shredded red cabbage
1 large tomato, diced
1/4 C minced red onion
2 fake chicken patties (optional, or use real chicken)
2 C salad greens
Directions
1. Steam corn, either by putting the corn about 1 inch water in a shallow microwave safe container and heat in microwave for 5 mins. or in a steamer tray on the stove.
2. When cool enough to handle, cut the kernels from the cob with a knife.
3. Whisk lime juice, oil, salt and pepper in a bowl. Add the corn, beans, cabbage, tomato and onion and toss to coat. Refrigerate until ready to serve on top of salad greens. Top with fake chicken heated following directions on package.
In my boyfriend’s words “This is a great summer meal!”
Natural Handmade Soap
South Austin People aka So.A.P. make really great liquid soap, bar soap, lotions, and all sorts of other natural products. I don’t consider myself a hippie, but I love smelling like nag champa. It looks like you can buy their stuff online, or at loads of stores around town. I’ve seen them at Parts and Labour, Hyde Park Market, Pitchforks and Tablespoons, the Farmer’s Market, and I know they have them at other stores also.
I love their slogan “Strong Enough for a Dirty Hippie,
but Weak Enough for a Dirty CEO.”
Next I’m gonna buy the handsoap refill for $24:
This reminds me of something…
Did you have a good holiday weekend? I had a wonderful weekend in Denver, CO at Jenny and Siet’s wedding. It was wonderful and festive, and you could see fireworks going off during the reception. I promise to post photos soon.
In the meantime…
I saw these wonderful mobiles by Puka Puka:
and they reminded me of Xochi Solis’ wonderful art:
July Goals for Glademade
I am going to keep my goals short an sweet this month.
July Goals:
1. My priority goal this month is to work on artwork. I am feeling the need to get back to making art, and now is the perfect time to do it. No greeting card holidays coming up for a few months now.
2. Bring 5 more of each card design to Parts and Labour. When I go back to drop off those cards, take a picture of Parts and Labour for a blog post.
3. Start research for business plan, and create a time line for writing business plan (time line to start this month).
Revisiting my June Goals
Did I accomplish what I meant to this month? Let’s take a look:
June Goals:
1. Clean and organize studio and post before and after photos.
This is always in flux. Still need to post photos!!!
2. Bring card designs to Parts and Labour (South Congress, Austin)
I brought my cards to Parts and Labour yesterday! Hooray!
3. Update out-of-date flickr photos, and upload new card(father’s day and wedding congratulations) photos to flickr.
Done! My flickr is almost up to date. I still need to add photos of my new “Thank You, Darling” postcards.
4. Work on a 10 card pack. Mix and Match or greeting cards for each occasion throughout the year.
You can mix and match 10 Glademade cards here. I also added a mix and match 3-pack here.
5. Start research for business plan, and create a time line for writing business plan (time line to start this month).
This is not done. Still on my agenda!
6. Take a trip to Dallas to research Dallas Market Center. Investigate whether I want to “go to market”. Anyone want to go to Dallas with me?
I’m not really sure of the feasibility of this one. As it turns out, you either have to have a booth at the market, or you have to be a buyer. I found a loop-hole though: interior designers can bring up to 3 clients. I’ll be working on becoming a client in the future.
